"Veggie Patties"

· 1 can chick peas, drained
· 1 large sweet potato, cut into small pieces
· 3 green onions, sliced finely
· 1 large cooking onion, diced
· 3 carrots, grated
· ¼ cup fresh grated ginger
· 3 cloves garlic, grated
· 6 cups spinach, chopped
· 3 tablespoons hoisin sauce
· 3 tablespoons honey
· ¾ cup soy sauce
· ¼ cup vinegar
· 3 tablespoons jerk sauce or seasoning
· 1 tablespoon cumin

Turn on the stove to medium-high heat, and add sweet potatoes, onions, carrots, garlic and ginger to a large sauce pan (make sure the bottom is coated with oil), stirring occasionally. Turn the heat down to medium, and after about ten minutes, add the chick peas, spinach and cumin. Stir once before covering the saucepan for about five minutes. Once that time is up, add in the hoisin sauce, soy sauce, jerk, honey and vinegar. Leave uncovered for about fifteen minutes, stirring occasionally. After the time is up, turn the heat down to the lowest temperature and cover the pan for thirty minutes.

· 6 cups flour
· 2 tablespoons baking powder
· 1 tablespoon sugar
· 2 tablespoons salt
· ½ teaspoon turmeric
· 1 teaspoon ground cumin
· ¾ cup water
· 1 cup oil
· ¼ cup vinegar

Mix ingredients for dough together until it reaches a soft, squishy texture and then roll it out to about 1/6th of an inch thick. Cut into rectangles or circles, adding filling to one half filling before folding the other half over-top. Fold the edges over and press down with your fingers to make sure none of the filling escapes.

Bake for 25 minutes at 400 degrees Fahrenheit; cool for at least 30 minutes when they’re finished baking.
